Open Season: Bruschetta

I love bruschetta, but who doesn’t?  Toasted, oiled, garlicky bread with some sort of delicious assortment of fresh veggies or herbs and cheese is a winner in anyone’s book.  I opened my Martha Stewart Living this week to find a delicious cornucopia of bruschetta ideas under their 101 section.  Even though it is tasty, bruschetta can quickly become trite with the same old tomato or roasted red pepper topping.  So, ladies, free your minds and make some of these nifty numbers today!

Mozzarella, Pesto, Arugula, and Parmesan Bruschetta

Charred Carrots with Goat Cheese and Parsley Bruschetta

Ricotta with Lemon, Basil and Honey Bruschetta

Now I totally feel empowered to attempt any number of toppings for my toasts… who knows what I will come up with!  What would you try?
